Rainbow trout are a thin delicate cut of white meat. The flesh of this fish can change to pink or orange depending on the number of crustaceans in the trout’s diet. Mild flavor and delicate flakes, the flesh brightens in color as it cooks. Rainbow Trout are easily distinguished by their rainbow-like colors on their sides. All rainbow trout sold domestically are farmed. It is the oldest aquaculture industry in North America dating back to the 1880’s. They reach market size of 8-10 ounces in 8 to 12 months. Trout are farmed in concrete raceways or ponds.
