Halibut is a lean but meaty white fleshed fish. Halibut itself is mild in flavor, therefore it pairs well with many seasonings. And as it’s a meaty fish it’ll hold itself together making it easier to handle without flaking apart. Wild halibut season starts mid-March and lasts roughly until mid-November, however just like most wild species it is available year-round frozen or refreshed. Pacific (Alaskan) halibut vs Atlantic halibut Alaskan halibut are larger, found in the North Pacific Ocean, and have a more oval or triangular shaped body. Atlantic halibut are smaller, found in the North Atlantic Ocean, and have distinctive dark spots on their upper body. Both types of halibut are delicious and popular seafood options, but Alaskan halibut is generally considered to be of higher quality as it’s slightly thicker and has a slightly more flavorful meat.
