Walleye is a very lean freshwater fish with a fine-flaked, subtle, and mildly sweet flavor. Most commonly deep-fried but has a wide range of other dishes. It is widely regarded as the best-tasting freshwater fish. Walleye prefers large, shallow lakes with high turbidity. They are found and stocked in lakes from Quebec to Alabama. They are caught using trap nets, gillnets and hook and line. There is also a large winter fishery with gillnets set under the ice of frozen lakes. Closed seasons protect Walleye during spawning.
